Ingredients
115g fresh goat cheese
2 tablespoons freshly squeezed lemon juice (from 1 lemon)
Mix the goat cheese, lemon juice, pepper, and salt in a small bowl until smooth and combined.
Lay the prosciutto slices on a work surface. Spread 2 to 3 teaspoons of the goat cheese mixture on each slice of prosciutto.
Divide the arugula among the prosciutto, laying the greens at one end of each slice.
Top each pile of greens evenly with 2 to 3 avocado slices. Working with one prosciutto slice at a time and starting from the end with the avocado, roll up into a tight bundle.
